The elderflower season is a relatively short one - from May to around the end of June. For centuries, people have foraged fields and country lanes to pick the heads on a hot sunny day (the flavour is best when the elderflower heads are dry and warm). The flowers are delicate, the scent is distinct and the taste sums up summer. It's fruity and floral, subtle and sweet.
When it comes to elderflowers, the only thing to do is get out there and find them growing in the wild.
